I promised you this recipe on Monday....but I forgot...so I am sharing it today.
I love to cook. It is not only fun for me but relaxing too. So I thought I would share some of my favorite recipes that my friends and family also love. So from time to time you might see a Critty Joy ♥'s to Cook post.
One of my Mum and Sister-in-laws favorite things I cook is fried rice. My friend's Becky and Chris also like to cook their own version based on mine.
Last year after a craving for it I decided I wanted to just find out how to make it myself. So....I researched the internet and added my own oomph and this is what came out of it.

The night before or that morning you will want to cook your rice. It needs to be very cold to fry. I use a rice cooker and make 3 cups (1 and 1/2 cups of dry rice) of rice. That feeds Mum and I for dinner and lunch the next day or the two of us plus my brother and sister in law.
Once the rice is done put it in a bowl and store in fridge.

I love to add chicken to our fried rice so I sauté the chicken in oil (my favorite is coconut oil I also salt and pepper the chicken) and at the end like to add some soy sauce and toss the chicken in it for some added flavor.

This recipe is lacking in measurements because honestly I just throw things in until I like the color, flavor or texture with my own recipes....so this is my best guess ;)
Ingredients
3 cups cooked cold rice
3 tablespoons oil (you can use canola, vegetable, olive, or coconut I most often use olive or coconut)
Soy Sauce (2-3 tablespoons)
2 eggs, beaten
Your favorite add ins. (mixed vegetables, nuts, sprouts, scallions, bell peppers, etc)
Our favorites are:
1 cup peas and carrots
2 handfuls of mixed nuts
** while the chicken is sautéing I cook the veggies in the microwave.
Heat the oil in a sauce pan. When the oil is hot pour the cold rice in. Keep the burner at the highest temperature setting at all times and do not leave the rice unattended.
Fry rice for 8-10 minutes until warmed. Constantly stirring so the rice will not stick to the pan. You will notice the rice start to unclump as it heats and you stir.
Add soy sauce. This is to taste....Add it in small increments and taste until satisfactory for you. After you cook the dish a few times you will be able to tell by the color when you have added enough.
Cook for 3-4 minutes and then push rice to one side of pan.
Add beaten eggs to pan and scramble. When cooked thoroughly stir egg into rice.
Now. That is your basic fried rice.
Here is the fun part.
Adding your favorites. Most times I add 2 handfuls of nuts and peas and carrots.
To add the nuts...once again push your rice to one side...add the nuts and toast until aromatic. Then mix together and add the veggies.
The last thing I add is the chicken.
A quick stir and it's done.
***Sometimes I add mixed veggies or broccoli. It all depends on what we have. This is where you get to make it your own.

So there you have it...one of my favorite recipes. I enjoy ethnic dishes a lot so I am often in the kitchen experimenting. Maybe you will see another cooking experiment here soon!
