I love to cook but during the southern summers it just gets so hot. So I am looking foward to finding some easy summer recipes from all of you :o)
Potato salad is a southern cook out staple and last year I went on the search for the perfect recipe. I found many recipes but none caught my eye. So I decided to make up my own.
Red Potato Salad (Basic Recipe)
2 lb. red potatoes
6 eggs
1 cup mayonnaise (can be light)
1 cup sour cream (can be light)
Wash and scrub potatoes. In large pot of watet bring potatoes to boil. Potatoes are done when fork slides in easily. (usually 20 minutes) Drain potatoes and set out to cool.
While potatoes are cooking put eggs into sauce pan. Bring to a boil then turn burner off. Put a lid on the pan and let eggs sit for 15 minutes. (this is the best way to get a perfect hard boiled egg!) Refill pan with cold water and add ice....eggs will cool in about 10 minutes.
When potatoes are cool enough to handle cut potatoes into chunks. Let them finish cooling completely.
Chop eggs. You can do this as you would like...finely or large chunks.
Mix together eggs and potatoes. Add 1 cup of mayonnaise and 1 cup sour cream.
Stir until combined.
Store in refrigerator. (Potato salad always taste better the next day so you can make this the day before!)
This is a basic recipe. The fun thing is you can add what you want to the basic recipe. We add bacon bits, green onions and celery on occasion. For some family members I will add sweet relish or pickles. My dad likes his to have mustard in his so if he stops by I will some mustard to it and send him home with some. That is one of the best things about my favorite recipes...they are customizable!
I often cute this recipe in half and my Mum and I can have this for several different meals....one less thing to cook!
